Lentil Salad

1 cup lentils
-- For salad dressing --
1 medium onion -- chopped finely
2 tablespoons olive oil
2 tablespoons red wine vinegar
1/2 teaspoon dry mustard
1/2 teaspoon salt
1/4 teaspoon cayenne pepper -- regular or cayenne
1/2 teaspoon black pepper
1/4 cup fresh parsley -- chopped, optional

Boil lentils in 3 cups of water 20-40 minutes (depending on desiredconsistency.) Mix the salad dressing ingredients in a bowl, add the cookedlentils when done, cool in the fridge before serving. Pepper proportionscan be varied for zestiness.
