Caesar Salad
submitted by August 1997 Mom's List

1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons white wine vinegar
2 tablespoons lemon juice
chopped garlic*
1/2 teaspoon dijon mustard
1 teaspoon worcestershire sauce
1/2 can anchovies, minced **
1 egg yolk
1/2 cup extra virgin olive oil
1 head romaine lettuce -- cut into 1" strips
1/2 cup bacon, cooked -- cut into 1" pieces
1/2 cup homemade croutons from french bread ***
1/2 cup grated parmesan cheese

Mix salt, pepper, vinegar, lemon juice, garlic, mustard worcestershiresauce, egg yolk, anchovies, olive oil in a large bowl. Add in lettuce, bacon, croutons and cheese on top and then toss.

NOTES:

  • * I use 2 TBS which is VERY garlicy, but I like garlic. Use as much as you like.

  • ** If you don't like anchovies, you can leave them out. I do and it doesn't change the taste.

  • *** I season with olive oil and garlic before baking.
