Broiled Seafood Muffins

You can buy this wonderful cookbook

This recipe is a good choice for a luncheon or light supper. Tuna can besubstituted for the seafood listed.

2 English muffins, split
2 Tbl. light mayonnaise or salad dressing
4 oz. cooked crab, shrimp, or fish
2 oz. grated reduced-fat cheddar cheese

Toast muffins. Spread with mayonnaise. Top with seafood and cheese. Broiluntil cheese melts.
