1 lb. boneless, skinless chicken breasts
Cut chicken into bite size pieces. Place breading in a plastic bag and adda few pieces of chicken at a time. Shake to coat evenly. Microwave Method: Spray non-stick coating on a 9-inch by 13-inch bakingdish. Arrange chicken pieces so they are not touching. Cover with waxpaper and cook on high for 6-8 minutes or until chicken is tender,rearranging twice during cooking time. Conventional Oven: Preheat oven to 425 degrees. Spray a cookie sheet withnon-stick coating. Arrange chicken pieces so that they are not touching.Bake for 12-14 minutes. Optional mustards for dipping: sweet and sour (25 Calories per Tablespoon), honey mustard (35 Calories per Tablespoon), hot mustard (prepared) or dry mustard-follow package directions to mix with water (10 Calories per Tablespoon). Yield: 4 servings The cornflake crumbs give a golden brown color without the addition of fatthat you find in the packaged mixes. Make this large quantity to have onhand. This breading also works well for oven fried chicken, fish andoysters. Combine all ingredients and mix well. Place in an air-tight container.Mix well before using. Plan on 1/2 to 1 Tbl. of the breading for eachchicken part or fish fillet.
