Amish Friendship Bread

from Sue A.

1/3 cup flour, milk, sugar
1 large zipper style bag
1 cup oil
3 eggs
2 cups flour
1 cup sugar
1/2 cup milk
1 teaspoon vanilla
2 teaspoons cinnamon
1/2 teaspoon salt
1/2 teaspoon baking soda
1 1/2 teaspoon baking powder
1 large box of instant vanilla pudding

To start you need 1 zipper style bag (sandwich size is too small), 1/3 cup each of flour, milk, and sugar. Place flour, milk, and sugar in the bag, seal and mush bag to mix it together -- this is day one. Do not use any type of metal spoon or bowl for mixing in the process. Do not refrigerate the bag. If air gets into the bag, let it out. It is normal for batter to raise and ferment.

Day 1 -- This is the day you receive (or make) the batter, do nothing.
Day 2 -- Mush Bag
Day 3 -- Mush Bag
Day 4 -- Mush Bag
Day 5 -- Mush Bag
Day 6 -- Add 1 cup flour, 1 cup sugar and 1 cup milk. Mix within the bag.

Day 10 -- Mixing Day. In large non-metal bowl combine the batter, 1 cupof flour, 1 cup of sugar, and 1 cup of milk. Stir thoroughly and pour four 1 cupstarters into a 1 gallon ziplock bag. Keep one starter for yourselfand give three friends the others with a copy of these instructions.

To the remaining batter in the bowl, add these ingredients and mix well:
1 cup of oil, 3 eggs, 2 cups of flour, 1 cup of sugar, 1/2 cup of milk, 1 teaspoon of vanilla, 2 teaspoons of cinnamon, 1/2 teaspoon of salt1/2 teaspoon of baking soda, 1 1/2 teaspoons of baking powder, and alarge box of instant vanilla pudding. Mix some additional cinnamon and sugar and use some to dust 2 greased loaf pans. Pour 1/2 of the batter in each pan and sprinkle remaining cinnamon and sugar over the top of the batter in the pans. Bake at 350 for 1-1 1/4 hours. Cool on rack for 10 minutes then remove from pans. For Muffins: Bake at 350 for 15-18 mins or until knife inserted in center comes out clean.

Optional Ingredients

Add 1 cup nuts or 1 cup nuts and 1/2-1 cup raisins, dried cranberries, blueberries, or use your imagination!! Substitute black walnut extract or maple extract for vanilla and add 1 cup walnuts. Substitute banana pudding for vanilla pudding and add bananas. Substitute chocolate pudding for vanilla pudding, and 2 teaspoons of cocoa instead of cinnamon for chocolate bread/muffins. Substitute lemon or coconut pudding for vanilla pudding and use your imagination!

Or use white chocolate fat-free pudding mix with macadamia nuts. Chocolate pudding with 1 cup mini chocolate chips or M&Ms. This produces nearly 5 cups of batter. If you want to make two different flavored loaves, mix all ingredientsexcept pudding, then remove a scant 2 1/2 cups batter from original bowl to another bowl, add a small box of instant pudding of any flavor to eachbowl and completely mix. Follow the rest of the process as normal. ENJOY!!!!!!!!!!!!
