Berry Good Grilled Chicken Salad

There is no reason to wait until dessert to enjoy fresh strawberries. In this late spring inspired main course salad, fresh strawberries, mandarin oranges and grilled chicken make a colorful contrast against the deep green backdrop of fresh spinach. The sweet and tart Orange Balsamic Dressing ties the flavors together nicely. For the kids, instead of mixing everything together, the chicken and fruit are served on skewers.

Strawberry, Spinach and Grilled Chicken Salad

Time to table: 30 minutes
Serves 2 adults and 2 children

4 small boneless and skinless chicken breast halves
1-2 teaspoons dried orange peel
1-2 teaspoons garlic powder
Salt and black pepper for seasoning
Olive oil spray
1 pint fresh strawberries, rinsed and hulled
1 15-ounce can mandarin oranges, drained

GROWN-UPS 4 cups spinach leaves, rinsed and spun dry 2 thin slices of red onion, separated into rings Orange Balsamic Dressing (recipe follows)

Rinse the chicken under cold water and pat dry. Season with orange peel, garlic powder, salt, and pepper omitting any that the children do not like from their portions. Cut the chicken for the children into small pieces. Coat a skillet with cooking spray and stir fry the chicken pieces for 5-6 minutes or until cooked through. Transfer to another dish. Pan-fry the chicken for the grown-ups for 5-6 minutes per each side or until done.

Arrange the spinach on two dinner plates. Cut the strawberries in half or into quarters depending on their size. Arrange half of the strawberries, half of the mandarin oranges and the red onion attractively over the spinach. Cut the chicken for the grown-ups into thin slices and place on top of the salads. Serve with Orange Balsamic Dressing

Thread the chicken for the children on skewers alternating with orange segments and strawberries or make separate skewers.

Orange Balsamic Dressing 1 medium clove garlic, minced 2 teaspoons minced green onion 2 tablespoons balsamic vinegar 2 tablespoons orange juice concentrate, thawed Salt and black pepper for seasoning

Combine the garlic, green onion, vinegar and orange juice concentrate. Season to taste with salt and pepper.
