Zucchini Feta from Bulgaria

1 lb. zucchini
1/2 lb. feta cheese
1 lb. plain yogurt
2 eggs
salt
olive oil
parsley
garlic
baking powder (optional)

Take one pound of zucchini, chop into small cubes, and mix with a bit of salt, olive oil, parsley, and garlic. Add mixture to 1/2 pound of feta cheese (a little baking powder is optional.) Pour the contents into a pan and cook for about 20 minutes in a hot oven. Combine 1 pound of plain yogurt and two eggs. After 20 mintues, pour the yogurt and eggs over the contents of the pan. Cook for another 5-10 minutes.

Whether hot or cold the meal is light and good for any taste or age!
