Spicy Tomato, Chickpea, & Sausage Soup

1 pound turkey sausage -- or pork sausage
1 teaspoon vegetable oil
1 onion -- chopped
4 cloves garlic -- chopped
1 large carrot -- chopped
1 stalk celery -- chopped
2 jalapeno peppers -- thinly sliced
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon paprika
1/4 teaspoon chili powder
1/4 teaspoon pepper
1 can tomatoes -- 19oz/540 ml
1 can chickpeas -- 19 oz/540 ml
3 cups chicken stock
1/4 cup fresh cilantro -- chopped

Remove casings from sausage: cut into slices or break into chunks. In largepot, heat oil over medium heat. Cook sausage, without stirring for 5 min. Addonion, garlic, carrot and celery. Cook, stirring often, for about 10 min oruntil vegetables are softened and sausage is cooked through. Drain anyexcess fat. Stir in jalapeno peppers, cumin, coriander, paprika, chilipowder and pepper. Cook, stirring for 1 min. Pour in tomatoes, breaking upwith back of spoon. Bring to a boil. Reduce heat and simmer covered for 15min. Meanwhile rinse and drain chickpeas, stir into pot along with stockand 2 tbsp (25 ml) of fresh cilantro. Cover and simmer for 20 min. Servewith more fresh cilantro sprinkled over top. Enjoy!
