Pasta 'alla Martino'

A lively discussion on our mailing list about how to get our kids toeat vegetables yielded this great recipe suggestion from Diana Mannino of Cortona, Italia

In a blender or food processer, add the following:

Baby zucchini
Small carrots
Fresh peas from the pod
Fresh garlic (as much as preferred, I use quite a bit)
Bits of fresh tomato
High grade olive oil (cold pressed - extra virgin)
As much fresh basil as possible
Pine nuts
Freshly grated Parmeseano Reggiano

That's your sauce - not cooked. Cook up the pasta, any kind(preferably Italian!!) and pour the sauce on when the pasta has been strained. Mix up and of course the sauce will heat a bit too.

Unfortunately, many times this dish is not very visually pleasing...

Try adding more of a certain 'colour' to help those who are not too keen on the initial getting it into the mouth....

I don't know ONE child who has not loved this...of many nationalities.

The recipe above is a general one. I throw in what's ready and freshfrom the garden to a certain degree. The most important ingredientsare the pine nuts, fresh basil, olive oil and grated cheese....

Basically a take-off on pesto. It's a real playful 'recipe'. Goodluck!
