Lentil Chili

3 tablespoons olive oil
1 cup carrots -- chopped
2 cups zucchini -- chopped
2 cups eggplant -- not peeled, chopped
1 1/2 cups onion - chopped
hot chili -- chopped, 1-2 TBS
1 tablespoon garlic -- chopped
2 tablespoons dried oregano
1 1/2 tablespoons cumin
1/2 teaspoon cayenne
6 chopped tomatoes -- usually 2 cans -- US
2 1/2 cups broth -- veggie or chicken
2 cups lentils -- or 1 cup dried

Soak lentils for 6 hours. Saute carrots, zucchini, eggplant, onion, hotchili, and garlic in olive oil until softened, about 5 min. Add oregano, cumin,and cayenne. Cook about 1 min. Add tomatoes, broth, and lentils, simmer for 40 min, uncovered. Serve with corn tortillas, bread, or rice.
