Hummus 2

11/2 cups garbanzo beans *
1/4 cup tahini -- sesame seed paste
1 teaspoon lemon zest -- finely minced
1 pinch red pepper flakes
2 tablespoons fresh orange juice
1/4 cup fresh lemon juice
6 tablespoons olive oil
3/4 teaspoon salt
1/4 teaspoon ground cumin

In food processor process the garbanzo beans, tahini paste, lemon zest andred-pepper flakes for 1 to 2 minutes, stopping machine as needed to scrapedown the sides. Add the orange juice, lemon juice, olive oil, salt andcumin. Process until very smooth. If hummus is on the thick side, you canadd a teaspoon or two of water to adjust the consistency. Store inrefrigerator.

NOTES: * Drained. Can be cooked or canned, also known as chickpeas.
