Chicken Marbella

8 boneless skinless chicken breasts
1 head garlic -- minced
1/4 cup dried oregano
salt and pepper
1/2 cup red wine vinegar
1/2 cup olive oil
1 cup prunes -- pitted
1/2 cup Spanish green olives
1/2 cup capers -- with some juice
6 bay leaves
1 cup brown sugar
1 cup white wine
1/4 cup cilantro -- chopped

In large bowl combine the first ten ingredients. Cover and let marinate inthe refrigerator overnight. Preheat oven to 350 degrees. Arrange chickenin a single layer in one or two large shallow baking pans and spoon themarinade over it evenly. Sprinkle the brown sugar over the chicken and pourthe white wine around it. Bake for 50 minutes to one hour, bastingfrequently with pan juices. Transfer to serving platter, sprinkle withcilantro. Enjoy!

NOTES: This is a great, easy, elegant dish for company.
