Double Chocolate Cookies
submitted by August 1997 Mom's List

3 cups chocolate chips
1 stick butter or margarine
4 oz unsweetened baking chocolate
1/2 cup flour -- yes, this is ALL
1/2 teaspoon salt
1 teaspoon baking powder
2 tablespoons instant coffee granules
4 eggs
2 teaspoons vanilla
1 1/2 cups sugar -- I only use 3/4 cup
1/2 cup chopped nuts -- optional

Melt the butter and baking chocolate and half the chocolate chips in adouble boiler or microwave. Beat together eggs, vanilla, sugar untilcreamy. Mix together flour, salt, baking powder and coffee powder. Add themelted chocolate combination to the egg combination, let cool. Add theflour combination and remaining 1/2 of chocolate chips, optionally addnuts. Drop onto greased cookie sheets (the mixture should look impossiblyrunny). Bake at 350 F for 8 minutes or until the cookies start to developbubbles and cracks in the top.

NOTES: These cookies are truly dangerous. I usually freeze half the recipe in order to hinder over-indulgence. This may be a mistake, since thecookies, straight from the freezer, taste better than at room temperature.
