Carrot Cookies

1 cup carrots, cooked and mashed
3/4 cup sugar
1 cup shortening
1 egg
1/2 teaspoon almond flavoring (or vanilla)
2 cup flour
1 teaspoon baking powder
1/4 teaspoon salt

Icing:
juice of 1 orange
1 teaspoon soft margarine
sugar
spreadable icing

Cook carrots, drain, and mash. Allow to cool thoroughly. Cream sugar,shortening, egg, almond flavoring, and carrots together. Beat untillight and fluffy. Sift flour, baking powder, and salt together. Add tothe creamed mixture. Mix well. Drop by teaspoonful on to an ungreasedbaking sheet. Bake at 375 degrees for 10-12 minutes or until brown aroundthe edges. Ice while still warm. Yields 5 dozen cookies.

These are excellent and the kids LOVE them. Don't let the carrots scareyou off. I've never used the almond flavoring (because I don't haveany) and I've never iced them. The last batch I cut down on the sugar abit and they were still good.
