This is kind of an odd one. But definitely a change of pace.

SautŽ onion in oil. Add veggies, tomatoes and spinach (optional). Seasonwith salt and pepper, maybe some basil, and a bay leaf. Cover an simmeruntil heated through. Turn into casserole and cover with mashed potatoes.Dust with paprika. Bake at 350 for 30 minutes. Make muffins since the ovenis hot or read a magazine, suggests this reality check chef.

I added some Monterey jack cheese between the veggies and potato layers togive it a little protein. Elliot has sort of grown through his mashedpotato phase, but Ian enjoyed them.
