Indian meets Mexican

The Whole Family Cookbook

This recipes combines the flavors of India with the versatility of Mexican cuisine. The tandoori style chicken wraps are easily adapted to satisfy everyone. For the grown-ups, lean chicken breast is marinated in a spicy blend of yogurt, chiles and aromatic seasonings. For the children, the chicken is splashed with lemon juice and simply seasoned with salt. Everything is grilled over hot coals taking on more flavor. All the fillings are laid out on the table, family style, so that each person can choose just what they like.

Tandoori Chicken Wraps
Time to table: 40 minutes
Serves 2 adults and 2-4 children

2 boneless and skinless chicken half breasts
2-4 boneless and skinless chicken thighs
1 large lemon
Salt for seasoning
Tandoori Marinade (recipe follows)
4 plum tomatoes, rinsed, quartered, and seeded
1/2 red onion, peeled and sliced
4-6 low-fat flour tortillas
1 whole cucumber, peeled and diced
1/4 cup sliced nacho rings (pickled sliced jalapeño chiles)
1/4 cup fresh cilantro, rinsed with stems removed
Optional: prepared mango or peach chutney

Rinse the chicken and pat dry. Squeeze the lemon juice over the chicken breasts and thighs. Season generously with salt. Prepare the Tandoori Marinade in a large plastic bag, squeezing to combine the ingredients. Add the chicken breasts and knead the bag until the marinade is well distributed. Seal and refrigerate for several hours or overnight. Wrap the chicken thighs in plastic wrap and refrigerate.

Start the coals of an outdoor grill. Season the tomatoes and onions with salt and place in a barbecue basket coated with oil to prevent sticking. When the coals are ready, remove the chicken breasts from the marinade wiping off any excess. Grill the chicken breast and thighs until cooked through, 4-6 minutes per side. Grill the onions and tomatoes for 3-4 minutes per side until tender and slightly charred. Cut the chicken and vegetables into bite-size pieces and arrange attractively on a serving platter. Arrange the cucumber, jalapeños, and cilantro on a plate and place on the table. Sprinkle the tortillas with water and wrap in aluminum foil, two at a time. Heat over the grill for about 1 minute per side. To assemble the wraps, let each person choose their favorite fillings and place in the center of a tortilla. Fold the top and bottom of the tortilla towards the center and roll up. For children who prefer their foods separated, let them select what they like and arrange separately on their plates.

Tandoori Marinade
  • 2 tablespoons minced onion
  • 1 garlic clove, minced
  • 1 teaspoon grated fresh ginger or 1/2 teaspoon powdered ginger
  • 1 serrano chile, minced
  • 1/2 teaspoon garam masala*
  • 4 ounces plain non-fat yogurt

Combine all the ingredients together.

Note: Garam masala is a very aromatic mixture of spices commonly used in Indian cuisine. Garam masala can be purchased in some specialty stores although all the ingredients can be found separately at most grocery stores. While there is no standard recipe, I use the following combination: 2 teaspoons ground cardamom, 1 teaspoon ground cinnamon, 1 teaspoon ground cumin, 1/2 teaspoon ground cloves, 1/2 teaspoon ground black pepper and 1/4 teaspoon ground nutmeg. Seal in an airtight container.
