Sweet Onions Are A Sure Sign of Spring

Onions rarely play the staring role of any dish unless they happen to be sweet spring onions. Walla Walla, Maui, Vidalia and other varieties are available for just a few short months in spring and early summer. In this Mediterranean inspired stuffed pizza, calzones are filled with a mixture of sweet onions, black olives and anchovies. For the children, cheese and pepperoni are more traditional and more to their liking.


Time to table: 30 minutes
Serves 2 adults and 2 children

Olive oil spray
1 10-ounce can of refrigerated pizza dough
4 ounces low-fat mozzarella cheese, grated

Grown-Ups
1/4 pound Walla Walla or other sweet onion, thinly sliced
Salt and pepper for seasoning
2 tablespoons dry white wine or water
4 pitted and chopped Greek olives
Optional: 2 anchovy filets, drained and chopped

Children
2 tablespoons pizza sauce (can be purchased in a squeeze bottle)
2 tablespoons chopped pepperoni or Canadian bacon

Set oven temperature to 350°. Coat a large non-stick baking sheet with olive oil spray and set aside. Coat a non-stick skillet with olive oil spray and heat for 2 minutes over medium-high heat. Add the onion and season with salt and pepper. Cook for 2-3 minutes while stirring. Add the wine and olives. Cover and simmer for about 5 minutes until the onions are soft. Remove the cover and allow any liquid to evaporate.

Unroll the pizza dough and cut into 4 even size pieces. Place a layer of cheese in the center of 2 pieces of dough. Top with the onion mixture and sprinkle with anchovies, if using. Spread the pizza sauce in the center of the remaining pizza dough. Top with cheese and pepperoni.

Form the calzones by bringing the corners together in the center twisting to secure. Pinch the seams together until sealed. Place on the baking sheet and bake for 20 minutes until golden brown.
