Miscellaneous | Family Fare | Quick & Healthy Chinese Fried Rice & Have It Your Way Fried RiceIn our home, fried rice is a favorite. The kids get it just the way they likeit and don't have to pick out little flecks of green onion or anything elsethey don't like. The meal is extremely versatile because a variety ofingredients can be used, ranging from chicken or beef, Canadian bacon or ham,and even shrimp or scallops. I always have a couple of the main ingredientsin the fridge or freezer. Have all the ingredients ready on paper towels orsmall paper plates instead of dishes to make clean-up easier. Select theingredients that the kids like and stir fry. Transfer to individual dinnerplates and keep warm. Then stir fry the remaining ingredients for the grown-ups. The best fried rice is started with cold rice. If you don't haveleftover rice to start with, cook the rice then cool it on a cookie sheet forabout 15 minutes. 1/4 teaspoon each: garlic powder, onion powder, ground coriander and paprika
Mix the garlic powder, onion powder, ground coriander, paprika, chickenbouillon, dark sesame oil, rice vinegar and soy sauce together in a smallbowl. Stir until blended. Oil a non-stick wok or skillet with sesame oil. Heat over medium-high heatfor 2 minutes. Add the eggs and scramble until cooked through. Transfer to apaper plate. Oil the wok again. From the ingredients list, choose the onesthat your kids like. Try to include some meat, egg and vegetables along withthe rice. Stir fry until heated though. Season with the soy sauce mixture,plain soy sauce or let the kids add their own at the table. Transfer toindividual dinner plates and keep warm in the oven. Stir fry the remaining ingredients until heated through. Season with the soysauce mixture according to taste. Garnish with green onions. Makes 4servings.
