Chicken with Dried Plums and Fresh Apples

Prunes are making headline news. In a recent study released from TuftsUniversity in Boston, prunes top the list of fruits and vegetables measuredfor their antioxidant power. Antioxidants are said to protect against heartdisease, cancer and other illnesses. But mention prunes in a conversation andeveryone starts to giggle. This easy week night meal made with chicken,prunes, and apples is a great dish for kids because is has a slightly sweetflavor. But if you are not sure if your kids will like it, just remove theirpieces of chicken before proceeding with the rest of the recipe.

8 boneless, skinless chicken thighs
1/2 teaspoon garlic powder
1/2 teaspoon poultry seasoning
Salt and pepper for seasoning
Olive oil for coating the skillet
1 medium size green apple, quartered, cored and sliced
1/2 cup diced onions
2 teaspoons minced garlic
1/2 cup chopped pitted prunes
1/2 cup apple juice

Season the chicken with garlic powder, poultry seasoning, salt, and pepper,omitting any that the children don't like from their portions. Lightly coat anon-stick skillet with olive oil. Heat the skillet over medium-high heat for2 minutes. Add the chicken and pan fry until cooked through, 4-5 minutes perside. Add the apple, onion, garlic, and prunes. Cook for 2-3 minutes whilestirring. Add the apple juice, bring to a boil, reduce heat, cover and simmerfor 10-15 minutes. Makes 4 servings.
