This easy week night meal made with chicken,prunes, and apples is a great dish for kids because is has a slightly sweetflavor. Season the chicken with garlic powder, poultry seasoning, salt, and pepper,omitting any that the children don't like from their portions. Lightly coat anon-stick skillet with olive oil. Heat the skillet over medium-high heat for2 minutes. Add the chicken and pan fry until cooked through, 4-5 minutes perside. Add the apple, onion, garlic, and prunes. Cook for 2-3 minutes whilestirring. Add the apple juice, bring to a boil, reduce heat, cover and simmerfor 10-15 minutes. Makes 4 servings.
